The CVA for Cuppers course is a sensory training program designed for coffee professionals who want to sharpen their sensory awareness, calibrate their evaluations, and understand the relationship between perception, value, and communication.
⚠️ Please note: This is not a cupping course—we do not teach the mechanics or protocols of cupping. Instead, we focus on how to assess and interpret coffee quality through a more intentional, less biased, and scientifically grounded approach.
This is not a flavor mapping exercise. You’ll develop the skills to separate what you perceive from what you prefer—and to speak clearly about both.

- How to use the Coffee Value Assessment Forms: Descriptive, Affective, and Extrinsic—each completed separately to reduce bias and support accurate interpretation.
- Descriptive Calibration: Learn to identify and describe flavor, aftertaste, mouthfeel, and other key sensory attributes with clarity using CATA terms, intensity scales, and freely-elicited notes.
- Affective Evaluation: Practice scoring your impression of quality—distinct from description—on a 9-point scale, while understanding your own preferences and potential market alignment.
- Extrinsic Understanding: Analyze farming, processing, trading, and certification information and how it affects the perception and value of coffee.
